These breakfast stuffed baked taters are crispy on the outside, fluffy on the inside, and loaded with scrambled eggs, bacon, sautéed mushrooms and onions, and a creamy, cheesy drizzle that takes things way over the top. This is the kind of breakfast that makes you pause mid-bite and go, “okay… wow.”
And fair warning—these are not “eat politely at the table” potatoes. I fully intended to sit down and enjoy mine like a civilized human… and instead devoured it like I had just survived a long winter in the wilderness. They’re cozy, hearty, a little messy in the best way, and dangerously easy to go back for “just one more bite”… five times.

If too thick, add more liquid 1 tbsp at a time and stir.- Add:½ tsp garlic powder, ½ tsp onion powder, ½ tsp Dijon mustard, ½ tsp nutritional yeast, pinch salt
- Add 1 cup vegan mozzarella gradually, stirring constantly until melted (~5 min total)Transfer to blender/mini processor → blend until smooth
