Challenge accepted.

If you’ve ever wondered whether a stack of truly fluffy, bakery-style pancakes can come out of a tiny RV kitchen, the answer is a very loud yes. These gluten-free blueberry pancakes are thick, soft, and lightly sweet — and then we go and crown them with a warm, cinnamon-spiced apple pie topping. Breakfast suddenly feels like a cozy fall festival happening right on your stovetop… even if that stovetop is three inches from your fridge and one inch from your dog’s nose.
Hubby and I couldn’t even wait until the full batch was done — we split a pancake right out of the pan like two impatient kids who had zero self-control. (No regrets. 10/10 recommend.) Once the rest finished cooking, the stack came together beautifully: fluffy layers, pockets of blueberries, and a glossy drizzle of apple goodness running down the sides. This one is pure breakfast comfort, and perfect for weekends, holidays, or “just because pancakes make everything better.”
The Pancake Moment That Even Our Doctor Loved
I have to share this because it was too funny and too perfect not to include. During a Zoom appointment, I told our doctor that we’d recently started using King Arthur’s gluten-free flour for these pancakes because it’s been giving us such amazing results.
Before I could even finish explaining, Matt held up one of these giant, fluffy pancakes to the camera like he was presenting evidence. (Nothing says professionalism like breakfast show-and-tell. 😆)
Our doctor immediately laughed and said, “You’re tempting me!”
Then he added, “I actually have a pancake waiting for me right now.”
And then came the line I’m absolutely putting in this post:
“Doctor approval!”
If that’s not a glowing endorsement for tiny-kitchen comfort food, I don’t know what is.

Fluffy Blueberry Pancakes With Warm Apple Pie Topping (Gluten-Free)

Method
- Whisk the dry ingredients. In a large mixing bowl, whisk together the King Arthur gluten-free flour, baking powder, baking soda, salt, collagen peptides, and arrowroot.
- Blend the wet ingredients. In a separate bowl, whisk the eggs, canned coconut milk (start with 1¾ cups), apple cider vinegar, melted ghee, vanilla, and maple syrup.
- Combine wet and dry. Pour the wet mixture into the dry ingredients and whisk until smooth. Batter will be thick — this is correct and gives you the tall “king-sized” rise.
- Rest the batter (5–8 minutes).Let the batter sit to hydrate the flour fully and activate the baking powder/soda. If it becomes too thick, add 1 tablespoon water to loosen slightly (only if needed).
- Fold in the blueberries and cinnamon.
- Preheat the skillet. Heat a nonstick or cast-iron skillet over medium to medium-low heat. Lightly grease if needed.
- Scoop the batter. Use a rounded 1/4 cup scoop for each pancake. These will puff up significantly.
- Cook the pancakes. Pour batter into the skillet and cook 2–3 minutes per side. Note: These pancakes won’t bubble on top like traditional pancakes. The edges will turn matte and look slightly set instead of glossy. Gently lift a corner with your spatula — if the underside is golden, it’s ready to flip.
- Check for doneness. Gently press the center of each pancake after flipping —if it springs back, it’s done.
- Repeat.Continue cooking until all batter is used.(Feel free to split one with your spouse while the rest finish — highly recommended. 😆)

If you want to take these pancakes from cozy to irresistible, this warm apple topping is your new best friend.
Ingredients
- 5 apples, peeled and diced
- 2–3 tbsp coconut sugar
- 1–2 tbsp maple syrup (optional, for shine + caramel notes)
- 1 tbsp ghee or coconut oil
- 1/2 cup water or apple juice
- 1 tsp cinnamon
- Pinch of salt
- 1 tbsp arrowroot + 1 tbsp cold water (slurry)
- Optional: 1 tbsp orange juice + zest of 1/2 an orange
Instructions
- Add apples, coconut sugar, maple syrup, ghee, water (or apple juice), cinnamon, salt, and optional orange zest/juice to a saucepan.
- Bring to a gentle simmer over medium heat.
- Cover and cook 6–8 minutes, stirring occasionally, until the apples soften.
- Stir in the arrowroot slurry and cook 1–2 minutes until thick, glossy, and spoonable.
- Remove from heat and let cool slightly before spooning over the pancakes.
Fruit Variations
These pancakes love toppings — here are easy swaps depending on the season:
🍐 Cinnamon Pear Topping
Replace apples with diced pears.
Add a pinch of nutmeg and 1/2 tsp vanilla.
Cook time stays the same.
🍑 Peach Compote
Use fresh or frozen peaches.
Add 1–2 tsp lemon juice and reduce cinnamon to a pinch.
Amazing in summer.
🍒 Cherry-Maple Topping
Use pitted cherries.
Add 1–2 tbsp maple syrup + a splash of water.
Beautiful color and delicious over blueberry pancakes.
🍓 Quick Berry Sauce
Use mixed berries, 1 tbsp honey or maple syrup, and 1–2 tsp lemon juice.
Simmer 5 minutes — no slurry needed unless you want it thicker.
Tip:
All fruit toppings can be made ahead and reheated.
They also freeze well in small jars for easy weekend breakfasts.
Storage & Reheating
Refrigerator
Store leftover pancakes in an airtight container for 3–4 days.
Place a small piece of parchment between each pancake to prevent sticking.
Apple topping will keep 3–4 days in a sealed jar.
Freezer
These pancakes freeze beautifully.
- Let pancakes cool completely.
- Layer with parchment between each one.
- Freeze in a zip-top freezer bag or airtight container for up to 3 months.
Apple topping: Freeze in small jars or silicone molds for 1–2 months.
