Savory High-Protein Breakfast Crepes with Veggies

- Heat a lightly greased nonstick skillet over medium-low heat.
- Pour about ¼ cup batter into the pan, swirling to coat thinly.
- Cook 60–90 seconds until set, flip, and cook another 20–30 seconds.
- Stack crepes and set aside.
- Heat fat in a skillet over medium heat.
- Sauté mushrooms and zucchini until tender. Add greens and cook until wilted.
- Push veggies aside; scramble eggs in the same pan.
- Add cooked protein and seasonings. Stir to combine.
- Spoon filling into crepes
- Roll or fold
- Serve warm with crispy hashbrowns on the side
