These juicy smash burgers are made with simple seasoning and cooked until perfectly crispy on the edges. Layered with bacon, sautéed mushrooms, melty cheese, and a creamy drizzle, this cozy comfort meal is easy to customize—whether you go double stack or keep it classic.

Ingredients
  

For the Burgers
  • 1 lb ground beef
  • Salt, to taste
  • Black pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp onion powder
Toppings
  • 4–6 slices bacon, cooked
  • 1–2 cups mushrooms, sliced
  • 4 slices cheese (or dairy-free alternative)
  • Pickles (optional)
  • lettuce or baby spinach
Creamy Drizzle
  • ¼ cup mayo (or AIP-friendly alternative)
  • 1–2 tsp mustard
  • Splash of pickle juice (optional but 👏)
For Serving
  • 2–4 gluten-free buns (store-bought or homemade — link your recipe here)
  • Ghee or oil for cooking

Equipment

  • skillet
  • Spatula for flipping and smashing burgers – if needed
  • knife
  • Cutting board
  • Cast Iron Bacon Press for smashing burgers

Method
 

  1. Cook the bacon: Cook until crispy, set aside. Leave a little fat in the pan for flavor
  2. Sauté the mushrooms: Cook in bacon fat or ghee.Let them get golden and slightly caramelized. Set aside
  3. Smash the burgers: Heat skillet until hot. Add beef (loose ball form). Smash thin. Season with salt, pepper, garlic powder, onion powder
    👉 Let cook undisturbed for crispy edges
  4. Flip + top: Flip once edges are browned. Add cheese. Let melt
  5. Assemble: (Optional but recommended) Lightly toast buns. Layer: Burger, Mushrooms, Bacon, Lettuce, Drizzle
    👉 Don’t be shy here… messy is the goal 😏

Simple Seasoning Wins
