Too dense, too dry, or falling apart the second something juicy touches them—we’ve all been there.
These? Not these buns.
These soft gluten-free burger buns are lightly golden, gently chewy, and sturdy enough to hold even the messiest smash burgers (which is exactly what we want 😏). With a simple dough, a cozy rise, and a little help from collagen for structure, they come together easily—even in a tiny kitchen—and turn any meal into something that feels just a little more homemade.

Soft Gluten-Free Burger Buns (Pillowy, Golden & Easy)

Activate + mix
In a bowl: warm water + sugar + yeast. Let sit 5 minutes (foamy = good)- Add: Egg, Oil & Collagen Then stir in: Flour + salt👉 Dough will be soft, sticky, almost like thick batter — that’s perfect
First rise
RV hack: )Warm your countertop oven on the lowest setting – briefly, turn OFF, then proof insideCover bowl Let rise 45–60 min (until puffy).Shape buns
Divide into 6 buns. Line pan with parchment. Oil your hands (important!)👉 Scoop + gently shape (don’t overwork)👉 Flatten slightly (they puff up!)Second rise
Cover loosely with plastic wrap. Lightly spray one side with olive oil to keep the plastic wrap from sticking to the buns. Let rise 20–30 minBake
Bake:Countertop oven: 370°F, 375° for home oven. 12 – 14 minutes. Or until lightly golden. *all types of ovens vary and have hot spots. Rotate baking tray half way through and watch your buns closely when it gets close to the end of the baking time.Cool (important!)
Let sit at least 10–15 min👉 This sets the structure so they don’t fall apart
