Some taco nights start with a plan. Others start with staring into the freezer and discovering a bag of cod you forgot you bought. That’s how these tacos were born — a little improvisation, a little curiosity, and the hopeful thought that pineapple salsa might actually work with crispy fish. Turns out… it absolutely does. The cod gets a crunchy pork-rind crust, the pineapple salsa brings bright sweetness, and the creamy coconut-lime drizzle ties the whole thing together like it meant to happen all along.

And then my husband built his taco like a champion and casually added rice inside it — which honestly wasn’t part of the plan, but it worked so well I had to admit he might be onto something. The tacos were messy, crunchy, sweet, and just a little ridiculous in the best possible way. Around here, that’s usually the sign of a dinner worth writing down before we forget what we did and have to try to recreate it again next week.

These crispy cod fish tacos are coated in a savory pork-rind crust and tucked into warm homemade tortillas. Fresh pineapple salsa adds bright sweetness while a creamy coconut-lime drizzle ties everything together. Simple, gluten-free, and packed with flavor, these tacos turn an easy weeknight dinner into something a little special.

Ingredients
  

Crispy Cod
  • 1 lb cod fillets, thawed and cut into strips
  • 1 cup – 1 1/4 cup finely crushed pork rinds (I like mine very well coated)
  • 4 tbsp arrowroot starch (you may not use it all)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • 1 large egg, beaten
  • 2–3 tbsp ghee or avocado oil for frying
Pineapple Salsa
  • 1 cup fresh pineapple, finely diced
  • 2 tbsp finely diced onion (optional)
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp fresh lime juice
  • pinch sea salt
Coconut-Lime Drizzle
  • ½ cup thick coconut cream (from the top of a chilled can)
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1 tbsp chopped cilantro
  • pinch sea salt
  • 1–2 tbsp water to thin if needed
For Serving
  • 8 small tortillas (homemade or store bought)
  • seasoned rice (optional)
  • lime wedges

Equipment

  • Large skillet
  • Shallow bowls for dredging
  • Mixing bowls
  • Cutting board
  • Sharp knife
  • Tongs or spatula
  • Paper towels or cooling rack

Method
 

  1. Make the pineapple salsa: In a small bowl, combine diced pineapple, onion (if using), cilantro, lime juice, and a pinch of salt. Stir gently and set aside.
  2. Make the coconut-lime drizzle: In a bowl, whisk together coconut cream, lime juice, lime zest, cilantro, and salt. Add a little water if needed until the sauce reaches a drizzle consistency. Set aside.
  3. Prepare the fish coating: In a shallow bowl, mix crushed pork rinds, arrowroot, garlic powder, onion powder, cumin, salt, and pepper.
  4. Coat the cod: Pat the cod dry and cut into taco-size strips. Lightly dust with arrowroot, dip in beaten egg, then press into the pork rind mixture until fully coated. Let the coated fish rest for about 5 minutes so the crust sticks.
  5. Cook the fish: Heat ghee or avocado oil in a skillet over medium heat. Cook the cod for 3–4 minutes per side until golden brown and cooked through. The fish should flake easily.
  6. Warm the tortillas: Warm tortillas in a dry skillet for about 20–30 seconds per side until soft and lightly toasted.
  7. Assemble the tacos: Place a spoonful of pineapple salsa on each tortilla. Add crispy cod, drizzle with coconut-lime sauce, and serve immediately.

Prep Ahead Tips

If you want taco night to come together a little faster, a few parts of this recipe can easily be prepared ahead of time.

The pineapple salsa can be made up to a day in advance and stored in the refrigerator. The flavors actually improve as they sit together, giving the lime, cilantro, and pineapple time to mingle. Just give it a quick stir before serving.

The coconut-lime drizzle can also be mixed ahead and kept chilled in a sealed container for up to two days. Coconut cream tends to thicken in the refrigerator, so you may want to whisk in a small splash of water or lime juice before drizzling to bring it back to a smooth, pourable consistency.

You can also prepare the tortillas in advance. Cook them earlier in the day or even the day before, then store them covered in the refrigerator. When it’s time to eat, simply warm them in a skillet for about 20–30 seconds per side until soft and flexible again.


Chef’s Notes

Pat the fish very dry.
Moisture is the enemy of a crispy crust. Before coating, press the cod with paper towels to remove as much surface moisture as possible. This helps the arrowroot stick and allows the coating to crisp instead of steaming.

Use the zip-top bag trick for the arrowroot.
Place the arrowroot in a zip-top bag, add the cod pieces, and gently shake to coat. Lift the fish out and shake off the excess back into the bag. It’s faster, less messy, and gives a light, even coating.

Let the coated fish rest before cooking.
After coating the fish with the pork-rind mixture, let it sit for about 5 minutes before frying. This allows the coating to hydrate slightly and adhere better, which helps create a crisp crust that stays on the fish.

Cook in properly heated fat.
Hot oil or ghee gives the best sear. If the pan isn’t hot enough, the coating absorbs oil instead of crisping. The fish should sizzle immediately when it hits the pan.

Avoid overcrowding the pan.
Cook the fish in batches if necessary. Too many pieces in the skillet will lower the temperature and prevent the crust from crisping.

Use cold coconut cream for the drizzle.
Using the thick, chilled cream from the top of the can creates a texture similar to sour cream. Once drizzled over the warm fish, it softens slightly and melts into the tacos for a rich, creamy finish.

Build tacos in layers for crisp fish.
Place the pineapple salsa on the tortilla first, then the fish, and finish with the drizzle. This keeps the crispy coating from getting soggy.

Store leftover fish, pineapple salsa, and coconut-lime drizzle in separate airtight containers in the refrigerator for up to 2 days.

For best texture, warm the fish in a skillet over medium heat for a few minutes per side until heated through and crisp again. An air fryer also works well.
