Cozy Chicken & Sweet Potato Hash (Autumn Edition)

A cozy autumn skillet made with golden roasted chicken, caramelized onions, kale, and sweet potatoes. A simple one-pan lunch that’s full of flavor, AIP-friendly, and perfect for fall days in your tiny kitchen.

Ingredients
  

  • 2 small boneless, skinless chicken thighs (about 8 oz total), cut into bite-size pieces
  • 1 medium sweet potato, peeled and diced into ½-inch cubes
  • 1 tbsp ghee (or coconut oil)
  • 1/2 yellow onion, thinly sliced
  • 1 cup chopped kale (or baby spinach)
  • 1 tsp garlic powder (AIP-compliant)
  • 1/2 tsp sea salt (adjust to taste)
  • 1/4 tsp dried sage or rosemary
  • 1 tbsp water (for steam)
  • Optional: squeeze of fresh lemon before serving

  • Cast-iron skillet or sauté pan
  • Wooden spoon or silicone spatula

Method
 

  1. Par-cook the sweet potato: Add diced sweet potatoes to a skillet with a splash of water. Cover and steam over medium heat for 4–5 minutes until slightly softened, then remove and set aside.
  2. Sear the chicken: In the same skillet, add ghee and chicken. Cook 5–6 minutes until golden and cooked through. Remove and set aside with the sweet potatoes.
  3. Sauté the onions: Add sliced onion to the skillet; cook 3 minutes until caramelized.
  4. Combine everything: Return the chicken and sweet potatoes to the skillet. Add kale, garlic powder, sage, and salt. Toss to coat, then add 1 Tbsp water to help the kale wilt.
  5. Serve: Cook another 2 minutes until everything is heated through. Finish with a squeeze of lemon and a sprinkle of fresh herbs if desired.
