Soft Gluten-Free Burger Buns (Pillowy, Golden & Easy)

These soft gluten-free burger buns are golden on the outside and pillowy on the inside, with just the right structure to hold juicy burgers without falling apart. Made with simple ingredients and perfect for small kitchens, they’re a cozy homemade upgrade to any meal.

Ingredients
  

  • 2 cups King Arthur Gluten-Free Bread Flour (240g)
  • 1 tbsp sugar (or maple sugar)
  • 1 tsp salt
  • 2 ¼ tsp instant yeast (1 packet)
  • ¾ cup warm water (105–110°F)
  • 2 tbsp olive oil (or melted ghee)
  • 1 large egg (room temp)
  • 1 tbsp collagen peptides

Equipment

  • Mixing bowl

  • Parchment paper

Method
 

  1. Activate + mix

    In a bowl: warm water + sugar + yeast. Let sit 5 minutes (foamy = good)
  2. Add: Egg, Oil & Collagen
    Then stir in: Flour + salt
    👉 Dough will be soft, sticky, almost like thick batter — that’s perfect
  3. First rise

    RV hack: )Warm your countertop oven on the lowest setting - briefly, turn OFF, then proof inside
    Cover bowl Let rise 45–60 min (until puffy).
  4. Shape buns

    Divide into 6 buns. Line pan with parchment. Oil your hands (important!)
    👉 Scoop + gently shape (don’t overwork)👉 Flatten slightly (they puff up!)
  5. Second rise

    Cover loosely with plastic wrap. Lightly spray one side with olive oil to keep the plastic wrap from sticking to the buns. Let rise 20–30 min
  6. Bake

    Bake:
    Countertop oven: 370°F, 375° for home oven. 12 - 14 minutes. Or until lightly golden. *all types of ovens vary and have hot spots. Rotate baking tray half way through and watch your buns closely when it gets close to the end of the baking time.
  7. Cool (important!)

    Let sit at least 10–15 min
    👉 This sets the structure so they don’t fall apart
