Crispy hash brown crusted chicken breast pan-fried until golden and juicy, then finished with a warm honey garlic glaze. Ingredients
  

  • 2–3 chicken breasts, sliced into thin cutlets
  • 1 cup arrowroot starch
  • 2 eggs
  • 1½ lb russet potatoes, peeled, shredded & dry
  • 1¾ tsp sea salt, divided
  • 1¼ tsp garlic powder, divided
  • 1¼ tsp onion powder, divided
  • ¾ tsp dried thyme
  • ¾ tsp dried basil
  • Black pepper to taste (optional if tolerated)
  • Ghee or avocado oil for frying
Honey Garlic Glaze (Optional)
  • 1 tsp avocado oil or olive oil
  • ¼ cup raw honey
  • 2 tbsp water or chicken broth
  • 2 cloves garlic, cooked & mashed
  • 1 tbsp lemon juice or apple cider vinegar
  • ½ tsp sea salt
  • ½ tsp dried thyme or basil (additional, for the glaze)

Equipment

  • Cutting board
  • Sharp knife (for slicing chicken into cutlets)
  • Box grater or food processor (for shredding potatoes)
  • Clean kitchen tea towel (to squeeze moisture from potatoes)
  • 3 shallow bowls (dredging station)
  • Large skillet (cast iron or stainless steel preferred)
  • Spatula or tongs
  • Small saucepan (for honey garlic glaze)
  • Spoon or whisk

Method
 

Prep the Potatoes
  1. Shred potatoes → place in a towel → squeeze out as much liquid as possible.
  2. Then toss with:
    Optional: Add black pepper to taste if tolerated.
    1¼ tsp sea salt
    1 tsp garlic powder
    1 tsp onion powder
    ¾ tsp dried thyme
    ¾ tsp dried basil
    Optional: pinch turmeric (color only).
    This keeps the crust flavorful without overpowering the chicken or sauces.
  3. Dry potatoes = crisp crust. Wet potatoes = soggy sadness.
Breading Station
  1. 1️⃣Arrowroot bowl: Arrowroot starch mixed with the remaining salt, garlic powder, and onion powder.
  2. 2️⃣ Egg bowl: 2 eggs beaten
  3. 3️⃣ Potato bowl: Seasoned shredded potatoes
Coat the Cutlets
  1. Arrowroot Coating: Arrowroot starch mixed with the remaining salt, garlic powder, and onion powder. Lightly coat each chicken cutlet, shaking off excess.
  2. Egg Wash: Beaten eggs to help the coating stick. Dip the chicken fully, letting excess drip off.
  3. Hash Brown Crust: Seasoned shredded potatoes, squeezed very dry. Press the potatoes firmly onto both sides of the chicken so they adhere well. Tip: Press the potato shreds on gently but firmly — this helps create a cohesive, crispy crust that stays in place while cooking.
Pan Fry
  1. Heat ghee or avocado oil to medium-medium/high. Fry 3–4 minutes per side until: Deep golden. Chicken hits 165°F. Potato crust is crunchy. Transfer to rack (not paper towels) so the crust stays crisp.
Make the Honey Garlic Glaze (Optional)
  1. In a small saucepan, warm 1 tsp oil over low heat.
  2. Add the garlic and cook gently until soft and fragrant (do not brown).
  3. Stir in the honey, liquid, lemon juice or vinegar, salt, and herbs.
  4. Simmer gently for 3–5 minutes, stirring, until slightly thickened.
  5. Remove from heat and let cool briefly — the glaze will thicken as it rests.
  6. Drizzle lightly over the chicken just before serving.
