But even in that half-functioning state, I still managed to pull off these crispy Southern Fried Chicken Strips — and they turned out shockingly good. Juicy chicken strips, a three-step dredge, and just a single skillet later, my tiny RV kitchen smelled like a cozy Southern diner. takeout.
The secret to that perfect crunch is the ridiculously simple coating: a quick dip in beaten egg, a flavorful coconut-milk “buttermilk,” and a final roll through pork-rind crumbs. No marinating, no complicated steps, and minimal mess. If I can make these while bone-tired and on autopilot, they’re definitely going to become your new weeknight hero recipe.

Southern Fried Chicken Strips (AIP-Friendly, Gluten-Free, Dairy-Free)

- Slice each chicken breast into long strips, then cut each strip in half to make thin, roughly 4-inch pieces. Pat dry and season with pink salt and pepper.
- Bowl 1: Beaten egg
- Bowl 2: Seasoned coconut milk mixture
- Bowl 3: Pork-rind crumbs
- Let the coconut milk mixture sit 5 minutes — it thickens slightly like tangy AIP “buttermilk.”
- Dip each chicken strip into the egg, shaking off excess. Then dip into the seasoned coconut milk, again shaking off extra so the breading stays crisp. Finally, roll in pork-rind crumbs, pressing gently so they adhere.
- Heat a skillet over medium and add enough olive oil to lightly coat the bottom. Pan-fry chicken 3–4 minutes per side, or until golden, crispy, and the internal temperature reaches 165°F.
- transfer strips to a cooling rack or paper towel. Drizzle warm chicken with cilantro-lime sauce and enjoy immediately.
