Prep the Potatoes

Coat the Cutlets

Pan Fry
- Heat ghee or avocado oil to medium-medium/high. Fry 3–4 minutes per side until: Deep golden. Chicken hits 165°F. Potato crust is crunchy. Transfer to rack (not paper towels) so the crust stays crisp.
Make the Honey Garlic Glaze (Optional)
- In a small saucepan, warm 1 tsp oil over low heat.
- Add the garlic and cook gently until soft and fragrant (do not brown).
- Stir in the honey, liquid, lemon juice or vinegar, salt, and herbs.
- Simmer gently for 3–5 minutes, stirring, until slightly thickened.
- Remove from heat and let cool briefly — the glaze will thicken as it rests.
- Drizzle lightly over the chicken just before serving.
