I won’t say this sandwich will make you a morning person… but I will say it makes getting out of bed significantly less offensive. These flaky biscuit breakfast sandwiches start with a simple from-scratch gluten-free biscuit dough that bakes up golden, tender, and sturdy enough to hold all your favorite breakfast fillings. Perfect for cozy mornings, weekend brunch, or make-ahead breakfasts.

Ingredients
  

Dry
  • 240 g King Arthur Gluten-Free Measure for Measure (1:1) Flour
  • 1 tbsp aluminum-free baking powder
  • ¼ tsp pink salt
Fat
  • 6 tbsp cold ghee, cubed
  • ¾ cup coconut creamvery cold, straight from the fridge (do not warm)
Wet
  • 4-6 tbsp cold water, as needed *I used the water from the can.
  • 1 tsp apple cider vinegar
Filling
  • 8 slices thick-cut bacon (about 2 slices per sandwich) nitrate free preferred
  • 4 large eggs (1 per sandwich)
  • ½ cup dairy-free cheese, sliced or shredded (about 2 tbsp per sandwich)

Equipment

  • Air fryer with Bake setting
  • Parchment paper
  • Mixing bowl
  • Pastry cutter
  • Bench scraper or spatula
  • Biscuit cutter or sharp knife
  • Small brush (for ghee)

Method
 

  1. Combine Dry Ingredients: In a large bowl, whisk together the flour, baking powder, and salt.
  2. Cut in the Fats: Add the cold ghee and the cold coconut cream. Using a pastry cutter, cut both fats into the flour until the mixture looks shaggy with visible fat pieces throughout.
  3. Add Liquid: Stir in the apple cider vinegar. Add 4 tbsp cold water, mixing gently until a soft, slightly sticky dough forms. If needed, add the remaining 2 tablespoons. You want a soft slightly sticky dough. It may take more than 6 tbsp total, so add 1 tbsp at a time until the right consistency.
  4. Rest the Dough: Cover and let the dough rest for 10–12 minutes to fully hydrate the gluten-free flour.
  5. Fold for Flaky Layers: Turn dough out onto a lightly floured surface. Pat gently into a rectangle. Fold into thirds like an envelope. Rotate 90° and repeat for a total of 4 folds.
  6. Final Shape: Pat dough into a 1-inch-thick rectangle. Cut biscuits straight down (do not twist). Scraps may be gently pressed onto the bottoms of biscuits to avoid waste.
  7. Preheat & Arrange: Preheat air fryer on Bake at 375°F (190°C). Line basket with parchment and place biscuits slightly apart.
  8. Bake: Bake for 12 minutes.
  9. Brush & Finish: Brush tops lightly with melted ghee. Return to air fryer and bake 2 – 4 more minutes, until biscuits are fully risen and set.
  10. Final Rest: Turn off air fryer and let biscuits sit inside with the door cracked for 1 minute before removing.
  11. Cook Bacon: While the biscuits bake, cook bacon in a skillet over medium heat until crisp and rendered, turning as needed. Transfer to a paper towel–lined plate to drain. Set aside.
  12. Prepare Pan: In the same skillet (or a clean one), reduce heat to medium-low and add a small amount of fat if needed.
  13. Cook Eggs: Crack eggs into the pan and cook to your preferred doneness. Season lightly with salt. Remove from heat once whites are set and yolks are cooked to your liking.
Assemble the Sandwiches
  1. Split Biscuits: Carefully slice warm biscuits in half using a sharp knife.
  2. Layer: Place bacon on the bottom half of each biscuit, followed by a cooked egg and a slice of dairy-free cheese.
  3. Finish: Top with the biscuit lid. Serve immediately while warm.
