This isn’t just a tortilla recipe — it’s your new tiny-kitchen sidekick. One dough becomes tacos, burrito wraps, breakfast pockets, dinner hand pies, freezer meals, and whatever other cozy chaos your week throws at you. It stays soft when it cools, reheats without cracking, and quietly turns leftovers into “wow, we should make this again” meals. ✏️ Update Note (Why I Added Psyllium Husk)
After making these tortillas more times than I can count in my tiny RV kitchen, I realized I needed a version that worked with real life—not against it. The original recipe tasted great, but the tortillas would firm up as they cooled, which meant reheating was almost always necessary… and even then, they could crack when rolling. Adding a small amount of psyllium husk powder completely changed that. It gives the dough just enough stretch and flexibility so the tortillas stay soft even after cooling, making them perfect for prepping ahead of time. Now I can cook a batch, stack them, and use them later without fighting to reheat or worrying about tearing when rolling burritos or wraps—and that’s a game changer in a small kitchen.

The Cozy Wrap Dough (Soft Gluten-Free Wraps, Pockets & Freezer Prep)

Method
- Whisk flour, arrowroot, salt, baking powder, psyllium husk powder and collagen together in a bowl.
- Stir in olive oil and vinegar.
- Pour in hot water- 160° – 170°, and mix until a soft dough forms. Using hot water is important for the success of this dough.
- Knead 3–4 minutes until smooth and elastic.
- Cover and rest 5 – 10 minutes (this activates elasticity).The dough should feel soft and slightly tacky after resting. If it feels too firm, add 1 tablespoon of warm water and mix briefly until pliable.
- Divide dough into balls.
- Place dough ball between parchment sheets and roll just under 1/16" thick
- Cut into rounds with 6” or 8” cutters.
- Cook in dry skillet over medium heat:*30–40 seconds first side or until lightly golden*20–30 seconds second side or until lightly golden
- Stack cooked wraps in between parchment paper sheets. Keep the whole stack under a tea towel while you finish cooking the rest. They get softer as they cool.
- Roll dough to about ⅛-inch thick (slightly thicker than wrap thickness for structure).
- Cut dough into 5" – 8" circles (depending on the size you'd like these beauties to be). Spoon filling onto one half, leaving a ½-inch border. Brush the border with whisked egg white to help seal stay closed.
- Fold dough over filling. Press edges firmly with fingers then crimp with a fork.
- Bake at 375°F for 10 minutes or until lightly golden. Flip and bake the other side for another 8–10 minutes more or until lightly golden and cooked through. Air fryer method-Bake at 360° for 6-7 minutes (lightly golden on top). Flip and bake for another 3-4 minutes or until golden.
- Let pockets rest 5 minutes before serving so filling sets and doesn’t burst out.

🧺 My Simple “RV Tortilla Warmer” Hack
In a small kitchen, you don’t always have room (or need) for extra gadgets, so I came up with a simple way to keep tortillas warm and soft while I cook the rest of the batch. As each tortilla comes off the pan, I place it on a dinner plate and stack them in a loose spiral instead of directly on top of each other. Then I cover the stack with a second dinner plate turned upside down. The trapped steam creates a gentle seal that keeps the tortillas warm and flexible without making them soggy. The spiral stacking is key—it prevents them from sticking together and helps manage moisture, so every tortilla stays soft and ready to use.

Fresh Storage
Store cooked wraps in an airtight container in the fridge for up to 4–5 days. Freeze After Cooking.
Let wraps cool completely.
Stack with parchment between each wrap and freeze in a freezer bag for up to 2 months.
Freeze Before Baking (Fresh-Baked Anytime)
- Roll dough and cut into rounds.
- Stack rounds with parchment between each.
- Place in a freezer bag and freeze flat.
- When ready to use, thaw in the fridge or at room temperature until flexible.
- Cook or bake as directed — just like fresh dough.
