This Cozy AIP Taco Gnocchi Soup delivers all the warm, bold taco flavors — without triggering inflammation. It’s thick, hearty, and loaded with tender veggies, rich broth, and perfectly chewy white sweet potato gnocchi that mimic the hominy texture from my pre-AIP days. This bowl is pure comfort with a grain-free twist.
What makes this recipe extra special is the toppings — fresh cilantro, creamy avocado slices, bright jalapeño, and a dollop of AIP sour cream that melts into the broth just enough to feel indulgent. Add a side of homemade tortillas, radishes, and lime wedges, and you’ve got a full taco-night moment that still fits beautifully within AIP. Cozy AIP Taco Gnocchi Soup (Grain-Free, Veggie-Packed)

- Mix mashed sweet potato + arrowroot + salt until dough forms
- Roll into ropes → cut into gnocchi pieces
- Freeze on parchment for 20–30 minutes
- Drop into soup for 5–6 minutes at the end
- *These stay firm and NEVER get mushy.
- Heat olive oil in a soup pot
- Add ground beef
- Season lightly with salt
- Cook until browned
- Add onion + garlic → sauté 2–3 minutes
- Cook 3–4 minutes to soften edges

- Simmer 18–25 minutes, until veggies are tender and flavors combine.

Instant Pot Instructions:
- Turn the Instant Pot to Sauté. Add the olive oil, ground beef, onion, and garlic and cook until the meat is browned. If you want your carrots and zucchini soft, add them now and sauté for another 2–3 minutes. Stir in the seasonings, then add the pumpkin purée, chicken broth, apple cider vinegar, and optional fish sauce. Seal the lid and cook on High Pressure for 6 minutes, then quick release.
- After releasing the pressure, stir in any optional veggies that need to stay crisp-tender. This includes diced bell pepper, zucchini (if you want it firm), yellow squash, or chayote. These should be added after pressure cooking so they stay al dente instead of turning mushy.
- Turn the Instant Pot back to Sauté and add the frozen sweet potato gnocchi. Cook for 5–6 minutes until the gnocchi float and turn chewy. If using asparagus, add it during the last 3 minutes so it stays bright and crisp. Stir in the coconut cream, taste, and adjust the seasoning before serving. Top with avocado, cilantro, jalapeño, radishes, olives, lime wedges, and AIP sour cream.
