Prep Time 10 minutes
Servings: 4 servings
Course: Breakfast
Cuisine: American-comfort food

Ingredients

AIP Biscuits
  • 2 cups Bob’s Red Mill 1-to-1 gluten-free flour
  • 2 tbsp baking powder – aluminum free
  • 1/2 tsp sea salt
  • 2 tbsp solid coconut oil (or palm shortening)
  • 1 cup full-fat coconut milk (stirred)
  • 1 tsp apple cider vinegar
Pellet Grill Adjustments
  • 2 cups Bob’s Red Mill 1-to-1 gluten-free flour
  • 2 tbsp + 1/2 tsp baking powder (aluminum-free)
  • 1/2 tsp sea salt
  • 2 tbsp ghee, chilled and firm (instead of coconut oil)
  • 1 cup full-fat coconut milk (adjust: ¾–1 cup based on thickness)
  • 1 tsp apple cider vinegar
Homemade Turkey Sausage
  • 1 lb ground turkey (preferably 93% lean)
  • 1 tbsp olive oil or ghee
  • 1 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp sage
  • 1/4 tsp thyme
  • 1/4 tsp onion powder
  • 1/8 tsp cinnamon (optional — gives a hint of sweet warmth)
Gravy
  • 3 tbsp ghee (or olive oil)
  • 3 tbsp arrowroot flour (or tapioca flour)
  • 2 cups unsweetened coconut milk (full fat)
  • 1/2 tsp sea salt
  • 1/4 tsp sage
  • 1/4 tsp onion powder
  • Pinch of garlic powder
  • Optional: 1 Tbsp nutritional yeast for a slightly “cheesy” flavor

Equipment

  • Medium skillet
  • Mixing bowl
  • Whisk or wooden spoon
  • Baking sheet
  • Parchment paper
  • Measuring cups & spoons

Method

  1. Make the Biscuits: Preheat oven to 400°F (200°C). Line a baking sheet with parchment. In a mixing bowl, combine flour, baking powder, and sea salt. Cut in coconut oil until mixture is crumbly. Stir in coconut milk and vinegar until a soft dough forms. Scoop and drop onto the baking sheet. Bake for 12–15 minutes, until golden. Cool slightly.
  2. Cook the Turkey Sausage: Heat oil in a skillet over medium heat. Add turkey and season with salt, sage, thyme, onion and garlic powder. Cook until browned and crumbly (about 7–8 minutes). Remove from pan and set aside.
  3. Make the Gravy: In the same skillet, add ghee and arrowroot flour. Whisk constantly for 1 minute to form a roux. Slowly pour in coconut milk while whisking to avoid lumps. Add seasonings and cook until thickened (about 5 minutes).
  4. Combine: Return the cooked turkey sausage to the gravy. Stir and simmer 1–2 minutes to blend flavors.
  5. Serve: Split warm biscuits in half and spoon the gravy generously over the top. Add scrambled eggs and fresh fruit on the side for the full farmhouse breakfast experience.

Tiny-Kitchen Biscuit Tips

Chill the Dough:
Chill shaped biscuits 10–15 minutes so the fat stays cold. Cold fat = taller, flakier biscuits.

Preheat the Pan:
Heat your baking sheet in the pellet grill first. Hot pan = instant rise.
(If your grill browns too fast on the bottom, place an empty pan underneath.)

Add Steam:
Pellet grills run dry. Add a small ramekin of hot water or mist the chamber once.
Steam gives biscuits extra lift before the tops set.

Shape Them Thick:
Pat dough to 1–1¼ inches. Thicker dough = taller biscuits.

Don’t Twist the Cutter:
Press straight down. Twisting seals the edges and stops rising.

Fold for Layers:
Fold dough over itself 3–4 times to create flaky, bakery-style layers.

Slight Baking Powder Boost:
For pellet grills, use 1 Tbsp + ¼ tsp baking powder to help them rise in dry heat.

Use High Heat:
Bake at 400–425°F if your grill allows. Higher heat = bigger lift.
(If 350°F max, the tips above matter even more.)

Rotate Mid-Bake:
Pellet grills have hot spots. Turn the tray halfway through.

Cool Properly:
Cool on a rack or towel so the bottoms don’t steam and get dense — especially in tiny RV kitchens.

🌿 Variations

Change the protein: Swap ground turkey for ground chicken or (if tolerated) pork for a richer flavor. You can even use leftover cooked sausage or crumbled breakfast patties in a pinch.
Add extra flavor: Mix in a pinch of rosemary or fennel seed to the sausage blend for a more savory bite, or a little cinnamon if you like a subtle breakfast sweetness.
Make it a full plate: Pair the biscuits and gravy with scrambled eggs, oven-roasted sweet potatoes, or fresh berries for a well-rounded breakfast.
Gravy options: Use bone broth instead of coconut milk for a lighter, savory gravy — or mix the two for a perfectly creamy balance.
Reintroductions welcome: If you’ve successfully reintroduced black pepper or paprika, a light sprinkle adds a hint of spice and depth without overpowering the AIP base.

🧺 Make Ahead + Storage

Prep ahead: Bake the biscuits a day or two in advance and store them in an airtight container at room temperature. Reheat in the oven or toaster oven for that fresh-baked feel.
Gravy storage: The sausage gravy keeps beautifully for up to 3 days in the fridge. Reheat gently in a skillet or saucepan over low heat, adding a splash of coconut milk or broth to loosen it up.
Freezer-friendly: Both the biscuits and the sausage gravy can be frozen separately for up to a month. Defrost overnight in the fridge, then reheat and combine when ready to serve.
