For Baking (Oven Method)
- Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper or silicon mat.
- In a large bowl, whisk together the dry ingredients.
- Cut in cold ghee or coconut oil until crumbly — like coarse sand that smells way better.
- Stir in coconut milk and apple cider vinegar just until a dough forms. Do not overmix (the biscuits will revolt).
- Pat out dough into a square about ¾-inch thick. Cut into rounds with your biscuit cutter.
- Place biscuits on baking sheet, spacing them about an inch apart.
- Bake 12–15 minutes, until golden and lightly crisp on the edges.
- Cool slightly on a rack before serving warm with ghee, honey, or your favorite gravy.
For Skillet Option (Pan-Fried Drop Biscuits)
- Heat cast-iron skillet over medium-low heat with a thin layer of ghee.
- Drop spoonfuls of dough directly into skillet and flatten slightly.
- Cook 4–5 minutes per side, until golden brown.
- Transfer to cooling rack and resist the urge to eat all eight.
For Air Fryer Option (Because You Can)
- Preheat air fryer to 375°F (190°C).
- Line basket with parchment and arrange biscuits so they don’t touch.
- Air fry 8–10 minutes, flipping halfway through if needed.
