This cozy Chicken & Dumplings recipe is the ultimate comfort bowl — creamy, golden, and filled with tender chicken, vegetables, and your choice of fluffy AIP dumplings or classic gluten-free dumplings. The longer prep pays off in rich flavor, a silky herb-infused broth, and a dish that somehow tastes even better the next day. Perfect for chilly nights, meal prep, and anyone needing a warm, nourishing bowl of comfort.

Ingredients
  

Soup Base
  • 1.5 lbs chicken breast or thighs, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced (your tolerance)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • ½ cup coconut cream (ONLY the thick part)
  • ½ tsp turmeric (color + warmth)
  • 1 tsp dried basil
  • 1 tsp thyme1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½–1 tsp pink salt
  • Optional: ½ tsp coriander (you tolerate it)
  • Optional: splash of apple cider vinegar for brightness
AIP Dumpling Ingredients
  • 1 cup cassava flour
  • 1 tbsp arrowroot flour
  • ½ tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp pink salt
  • 1 tbsp olive oil
  • ½ cup full-fat coconut milk (carton style)
  • 1 tsp dried basil

Equipment

  • Large soup pot or Dutch oven
  • Measuring cups & spoons
  • Cutting board
  • Chef’s knife
  • Mixing bowl (for dumplings)
  • Fork or silicone spatula (to mix dumpling dough)
  • Spoon or small scoop (to form dumplings)
  • Ladle (for serving)

Method
 

Make the Soup Base
  1. In a large pot, sauté onion, carrots, celery, and garlic in a little oil until softened.
  2. Add diced chicken and cook until no longer pink.
  3. Pour in chicken broth, coconut cream, basil, thyme, garlic powder, onion powder, turmeric, and salt.
  4. Bring to a gentle simmer.
  5. Add a splash of ACV for brightness (optional but amazing).
  6. Let the soup simmer while you prepare your dumplings.
Make the AIP Dumplings
  1. Whisk dry ingredients.
  2. Stir in oil and coconut milk.
  3. Dough should be soft, sticky, spoon-drop texture.
  4. Rest 5 minutes.
  5. Roll or scoop into small dumplings.
  6. Bring soup to a gentle simmer.
  7. Drop dumpling dough by spoonfuls directly into soup.
  8. Immediately cover with lid.
  9. Cover and steam-simmer 12 minutes. Do not lift lid during this time.
  10. Texture: Soft, tender, fluffy — AIP perfection.
