Cook the potatoes: Heat 1 tbsp oil in a skillet. Add diced potatoes + pinch of salt. Cook until lightly browned and mostly tender, about 10–12 minutes. Remove and set aside.
Brown the beef: Add remaining oil to the skillet. Sauté onions until soft. Add garlic and cook 1 minute. Add ground beef and brown completely.
Season: Stir in your AIP taco seasoning. Add coconut aminos + broth. Simmer 2–3 minutes to bloom the spices.
Combine: Return potatoes to the skillet. Stir everything together and cook 3–5 minutes until thickened and cozy.
Optional jalapeño moment: Add sliced jalapeños on top — fresh for heat, or pan-fry for mild.
Serve: Spoon into bowls and enjoy with mashed potatoes, green beans, sautéed zucchini, or a dollop of AIP “sour cream.”
