AIP Beef & Potato Taco Skillet (One-Pan, Nightshade-Free Taco Dinner)

A cozy, one-pan comfort meal loaded with flavor — no peppers, tomatoes, or dairy required… unless you’re feeling rebellious with jalapeños tonight.

A cozy cast iron skillet filled with browned ground beef, golden potato cubes, sautéed onions, garlic, and fresh sliced jalapeños, all sprinkled with herbs for a rustic farmhouse-style dinner.

Some dinners are loud and dramatic, and some show up wearing fuzzy socks and a flannel. This Beef & Potato Taco Skillet is the fuzzy-sock kind — cozy, one-pan, and the culinary equivalent of saying, “I did my best today and that’s enough.” It uses simple ingredients, comes together fast, and tastes like taco night without the nightshades trying to ruin your life.

And because we live dangerously around here — in an RV, no less — we added jalapeños with full permission from the AIP Committee of Two (aka you and your taste buds). Toss everything into a cast iron skillet, let it sizzle into happiness, and you’ve got a hearty dinner that feels like a hug… minus the awkward small talk.

Alright, this is where things get exclusive — like a VIP lounge, but with far fewer velvet ropes and way more potatoes. Paid subscribers get all the behind-the-scenes goodies, bonus tips, and the “I can’t believe she wrote that” extras. If that’s your kind of party, come on in!

I’m not a doctor or a nutritionist — just a woman who loves her comfort food and believes healthy eating doesn’t have to taste like cardboard. My husband is under the care of a licensed physician for his autoimmune disorders, and everything you see here is based on what works for us (and what keeps him happily fed without setting off alarms).

ESTIMATED MACROS

  • Calories: ~390
  • Protein: ~23g
  • Fat: ~22g
  • Carbs: ~26g

🔄 Variations

  • Sweet Potato Swap: Replace white potatoes with diced sweet potatoes for a naturally sweeter, deeper flavor that pairs perfectly with the AIP taco spices.
  • Veggie Boost: Add chopped green beans, zucchini, or shredded carrots to sneak in extra veggies without changing the cozy taco vibe.
  • Cheesy Version: If tolerated, sprinkle Better Goods dairy-free cheese shreds on top and let them melt into all the nooks and crannies.
  • Mild Jalapeños: Pan-sauté the jalapeños before adding them to soften the heat and give them a smoky flavor.
  • Crunchy Topping: Add crushed pork rinds on top just before serving for a crispy, “taco-shell-meets-skillet” texture.
  • Rice Bowl Twist: Spoon the beef and potatoes over cauliflower-FREE white rice for a hearty, budget-friendly bowl.

🧊 Storage

  • Refrigerator: Store in an airtight container for 3–4 days. The flavors deepen and taste even better the next day.
  • Freezer: Freeze for up to 2–3 months. Thaw overnight in the fridge before reheating.
  • Reheat: Warm on the stovetop with a splash of broth, or microwave in 30-second bursts until heated through.
  • Meal-Prep Friendly: Portion into individual containers with a side of green beans or sautéed zucchini for quick grab-and-heat dinners.

Leftover Ideas

Make your Beef & Potato Taco Skillet stretch into tomorrow with these easy, cozy options:

  • Tortilla Tacos: Spoon leftovers into your homemade gluten-free tortillas for effortless next-day tacos. (Link your tortilla recipe here!)
  • Omelet Filling: Add a scoop to an omelet with onions or zucchini for a protein-packed AIP-ish breakfast.
  • Taco Salad Bowl: Serve over a bed of greens for a gluten-free taco salad that feels healthy and hearty.
  • Stuffed Sweet Potatoes: Load warm leftovers into a baked sweet potato for a quick, cozy lunch.
  • Rice or Quinoa Bowl: Add to white rice or quinoa for a simple, budget-friendly dinner remix.
  • Skillet Hash: Reheat in a skillet and crack an egg on top for a brunch-style leftover transformation.

🔧 Tips & Tricks

A few easy ways to get the best browning, the best texture, and the least amount of “why is this sticking to my skillet?”

  • Soak the Potatoes: A quick cold-water soak removes extra starch so they crisp up beautifully.
  • Dry Potatoes Thoroughly: Make sure they’re fully dried after soaking — moisture = soggy instead of crispy. Then do your precook in the microwave.
  • Pre-Cook (Microwave) for 8–10 Minutes: place chopped potatoes in a bowl with a little olive oil, salt, and optional pepper. Precook in the microwave before adding to skillet. They brown faster, cook more evenly, and are way less likely to stick.
  • Bloom the Spices: Simmer your taco seasoning with broth or coconut aminos for a minute before adding potatoes back. It deepens the flavor.
  • Adjust Jalapeño Heat: Fresh = spicy. Sautéed = mellow. Choose your adventure.
