A creamy, cozy farmhouse seafood Alfredo that feels fancy enough for date night… but comfortable enough for fuzzy socks and second helpings.

Some meals make you feel accomplished. This one makes you feel emotionally supported. Between the tender shrimp, buttery scallops, flaky cod, and a creamy herb-infused sauce that hugs every noodle like it missed you, this Seafood Alfredo doesn’t just feed you — it gently convinces your nervous system that everything might actually be okay. Add mushrooms, garlic, lemon, basil, and thyme, and suddenly your tiny kitchen smells like a rustic farmhouse that definitely owns a bread basket.
This is the kind of dinner that makes you light a candle you weren’t planning to light, wear socks you “save for special occasions,” and accidentally eat standing at the stove because it smells too good to wait. It’s cozy, creamy, comforting, and just fancy enough to feel impressive — without requiring a loan from a loan shark. Serve it with soft garlic breadsticks, a simple veggie side, and your favorite cozy playlist, and congratulations… you’ve officially created a main-character dinner.

Equipment
Method
- Cook noodles or rice according to package directions. Drain and set aside.
- Sauté mushrooms in ghee/olive oil until golden. Remove and set aside.
- Cook onion & garlic in same pan until soft and fragrant.
- Add seafood: Add cod first, cook 2–3 minutes, then add shrimp and scallops. Cook just until opaque. Remove and set aside.
- Whisk sauce: In a bowl, whisk coconut milk, broth, arrowroot, nutritional yeast, lemon juice, salt, pepper, basil, thyme, and nutmeg.
- Simmer & melt: Pour sauce into skillet and whisk until thick and creamy. Stir in ¼ cup of the vegan mozzarella and let it melt fully into the sauce.
- Return mushrooms, onions, garlic, seafood, and capers to the pan and gently fold.
- Add noodles and toss until fully coated. Or, pour over cooked noodles, rice or even mashed potatoes.
- Sprinkle remaining mozzarella over top, cover pan for 2–3 minutes to melt.
