These BBQ Chicken Bacon Mushroom Ranch Pocket Bakes are the grown-up, real-food version of that same comforting magic — soft, golden, handheld, and actually made with ingredients you can recognize.
Think of these as tucking smoky BBQ chicken, crispy bacon, sautéed mushrooms, and creamy ranch into a warm, golden blanket and whispering, “It’s okay, you’re safe here.” They bake up pillowy, steamy, and cozy without the brick-heavy pizza crust or the freezer-aisle mystery meat vibes. Every bite is warm, drippy, and comforting — the kind of food that makes you sigh a little when you sit down. Hot pockets… but make them real food. And honestly? BBQ Chicken Bacon Mushroom Ranch Pocket Bakes

- Whisk flour, arrowroot, salt, baking powder, and collagen in a bowl.
- Stir in olive oil and vinegar.
- Add hot water and mix into a soft dough.
- Knead 3–4 minutes until smooth and elastic.
- Cover and rest 30 minutes.
- Sauté mushrooms in olive oil until tender.
- Combine chicken, bacon, mushrooms, garlic powder, salt & pepper in a bowl.
- Whisk all ranch ingredients until smooth. Chill 10 minutes.
- Refrigerate 30 minutes minimum (1–2 hours ideal).
- It thickens as it chills and becomes scoopable-pourable.
- Divide dough into 8–10 balls.
- Roll slightly thicker than tortilla thickness; Place one ball between two sheets of parchment or waxed paper. Roll into a circle just under ⅛-inch thick — thicker than a tortilla, but thinner than a pie crust. The dough should feel soft and flexible, not stiff or stiffening. If the edges look thick, gently roll them thinner so the whole circle stays even.
- Cut 8-inch rounds.
- Mix chicken, bacon, mushrooms, and ranch sauce until well coated.
- Spoon ¼–½ cup filling onto half of each dough round, leaving a ½-inch border.
- Lightly brush the edges of the dough with beaten egg white.
- Fold dough over filling. Press edges gently, then crimp with a fork to seal.
- Brush tops lightly with egg white (or garlic-infused olive oil for extra flavor).
- Air Fryer: 360°F, foil tent with vent slit, 8–10 minutes. Remove foil last 2 minutes.
- Oven / Pellet Grill / Stone: 375°F, foil tent, 12–15 minutes. Remove foil last 3 minutes.

- Air Fryer: 300°F for 4–6 minutes, loosely tented with foil
