Ingredients
  

  • 1 cup vanilla-flavored coconut yogurt (unsweetened or lightly sweetened)
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries, blackberries — fresh or thawed)
  • 1/2 cup Sweet Crunchy Tigernut Clusters (your homemade batch)
  • 1-2 tsp pure maple syrup (optional drizzle)
  • Small handful fresh mint leaves (optional garnish)

Equipment

  • 2 small glasses, jars, or parfait dishes
  • Measuring cups
  • Spoon for layering (and “quality control”)

Method
 

  1. Layer the yogurt: Spoon about ¼ cup of vanilla coconut yogurt into the bottom of each glass.
  2. Add berries: Top with a few spoonfuls of mixed berries.
  3. Add clusters: Sprinkle on a layer of Sweet Crunchy Tigernut Clusters for texture and crunch.
  4. Repeat: Add another layer of yogurt, more berries, and finish with a generous handful of clusters.
  5. Garnish: Drizzle lightly with maple syrup and top with fresh mint if you’re feeling fancy.
