In a large mixing bowl, whisk together flour, baking powder, salt, cinnamon (if using), and collagen.
In a separate bowl, whisk eggs, coconut milk, ACV, melted ghee, vanilla, and maple syrup.
Pour wet ingredients into the dry and stir until JUST combined. Batter should be thick but pourable. A few small lumps are ok and actually help the pancakes rise.
Fold in blueberries gently.
Heat a skillet or griddle over medium heat and oil lightly.
Scoop batter using a 1/4 cup scoop.
Cook 2–3 minutes per side or until golden and fluffy.
Continue until all batter is used. This is where you use a rubber spatula to scrape out all the yummy goodness from the bowl for the last pancake!— makes 20 - 22 full-size pancakes. You don't have to oil the pan every time. Just for the first pancake to prime the pan.
Serve warm with melted ghee, syrup, eggs, or your favorite toppings.
