Brown the Chicken
- Pat thighs dry for best browning.
- Season both sides with salt, pepper, garlic powder, onion powder, and thyme.
- Heat oil/ghee over medium-high.
- Sear chicken skin-side down for 6–8 minutes until deeply golden.
- Flip and cook 3–4 minutes.
- Cook chicken to an internal temperature of 175°F for best tenderness and juiciness.
- Remove chicken to a plate.
Build the Cream Sauce
- Reduce heat to medium.
- Add minced garlic; sauté 30 seconds (don’t brown).
- Pour in broth and scrape browned bits.
- Add coconut milk/heavy cream, lemon zest, lemon juice, and aminos/Dijon.
- Stir and bring to a gentle simmer.
Thicken the Sauce (Optional)
- Stir in tapioca slurry if you want a thicker, silkier sauce.
Braise the Chicken
- Return chicken to skillet skin-side up (keep the skin above the sauce).
- Spoon sauce around chicken, not over the top.
- Cover and simmer 20–25 minutes, until chicken is tender and reaches 175°F.
Finish & Serve
- Taste and adjust citrus/salt.
- Garnish with parsley and lemon slices.
- Serve over rice, potatoes, or your favorite cozy base.
