Creamy Lemon Garlic Braised Chicken Thighs (Gluten-Free, One-Pan, AIP Optional)

Golden, crispy chicken thighs simmered in a creamy lemon-garlic skillet sauce until tender and fall-apart delicious. This one-pan meal is bright, rich, and comforting — perfect for an easy weeknight dinner with almost no cleanup. AIP-friendly option included.

Ingredients
  

Chicken Thighs
  • 4–6 bone-in, skin-on chicken thighs
  • 1–2 tbsp olive oil or ghee
  • 1 tsp pink salt or optional - sea salt
  • ½ tsp black pepper (omit for AIP)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme (optional)
Creamy Lemon-Garlic Sauce
  • 4 cloves garlic, minced
  • 1 cup full-fat coconut milk (or heavy cream if not AIP)
  • ½ cup chicken broth
  • Zest of 1 lemon
  • Juice of ½–1 lemon (start with ½ and adjust)
  • 1 tbsp coconut aminos or 1 tbsp Dijon mustard (non-AIP)
  • 1–2 tsp tapioca slurry (1 tsp tapioca flour + 2 tbsp water), optional for thickening
  • salt to taste
Optional Garnish
  • Parsley
  • Extra lemon slices

Equipment

  • Large skillet with lid
  • Tongs
  • Zester
  • Small bowl (for slurry)
  • Wooden spoon

Method
 

Brown the Chicken
  1. Pat thighs dry for best browning.
  2. Season both sides with salt, pepper, garlic powder, onion powder, and thyme.
  3. Heat oil/ghee over medium-high.
  4. Sear chicken skin-side down for 6–8 minutes until deeply golden.
  5. Flip and cook 3–4 minutes.
  6. Cook chicken to an internal temperature of 175°F for best tenderness and juiciness.
  7. Remove chicken to a plate.
Build the Cream Sauce
  1. Reduce heat to medium.
  2. Add minced garlic; sauté 30 seconds (don’t brown).
  3. Pour in broth and scrape browned bits.
  4. Add coconut milk/heavy cream, lemon zest, lemon juice, and aminos/Dijon.
  5. Stir and bring to a gentle simmer.
Thicken the Sauce (Optional)
  1. Stir in tapioca slurry if you want a thicker, silkier sauce.
Braise the Chicken
  1. Return chicken to skillet skin-side up (keep the skin above the sauce).
  2. Spoon sauce around chicken, not over the top.
  3. Cover and simmer 20–25 minutes, until chicken is tender and reaches 175°F.
Finish & Serve
  1. Taste and adjust citrus/salt.
  2. Garnish with parsley and lemon slices.
  3. Serve over rice, potatoes, or your favorite cozy base.
