Prep: Pat shrimp dry and season lightly with salt.
Sauté veggies: Heat ghee, olive oil, or a combination of both in a large skillet over medium heat. Medium low for those of us who are using propane-runs hotter. Add onion and cook 2–3 minutes. Add mushrooms and cook 3–4 minutes. Add garlic, cook for 30 seconds. Then add asparagus; cook 2-3 minutes.
Make the sauce: Stir in coconut milk, lemon juice (optional), Dijon (optional), Italian herbs, salt, pepper, capers, and a splash of caper brine. Simmer 5–7 minutes to thicken slightly.
Optional thickening: Stir in a small slurry (½–1 tsp tapioca or arrowroot mixed with cold water). Simmer 30–60 seconds. Trust me, it's worth the step.
