Ingredients

  • 2 cloves garlic — minced
  • 2 tbsp arrowroot flour
  • 1 cup chicken broth (AIP-compliant)
  • 3/4 cup full-fat coconut milk
  • 1/2 tsp sea salt (to taste)
  • 1/4 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/2 tsp turmeric (optional for color and anti-inflammatory boost) (optional) or:
  • 1-2 tsp nutritional yeast (optional, for extra savory flavor — AIP reintro)

Method
 

  1. Prepare Base: In a large skillet, melt ghee over medium heat. Add diced chicken and sauté until golden, about 5–7 minutes. Remove from skillet and set aside.
  2. Sauté Veggies: In the same pan, add onions and mushrooms. Cook 5 minutes or until tender. Add minced garlic and cook 1 minute more.
  3. Make Gravy: Sprinkle in arrowroot flour and stir until everything is coated. Slowly pour in broth while stirring to avoid lumps.
  4. Add Creaminess: Whisk in coconut milk, herbs, and seasonings. Stir until smooth and slightly thickened.
  5. Combine: Return chicken to the pan and simmer 5–7 minutes until heated through and gravy thickens to desired consistency.
  6. Serve: Spoon over your chosen mashed potato base, add peas with melted ghee, and serve with warm biscuits.
