Ingredients
  

For the Wraps
  • 6–8 large lettuce leaves (romaine, butter, or iceberg)
  • 6 slices Applegate turkey lunch meat (or any AIP-approved brand)
  • 4 slices uncured bacon, cooked crisp
  • ¼ cup shredded carrots or cucumber ribbons (optional crunch)
  • ½ avocado, sliced (optional if reintroduced)
For the Creamy Herb Drizzle
  • ¼ cup full-fat coconut milk (chilled for thickness)
  • 2 Tbsp olive oil or avocado oil
  • 1 Tbsp coconut yogurt (or AIP mayo substitute)
  • 1 tsp apple cider vinegar
  • 1 clove garlic, minced
  • 1 tsp dried parsley
  • ½ tsp dried dill
  • ½ tsp sea salt (Dr. Recommended pink salt)
  • Optional: squeeze of lemon for brightness

Equipment

  • Skillet or Air Fryer (for cooking bacon)
  • Small Mixing Bowl (for the creamy herb drizzle)
  • Whisk or Fork (for blending drizzle ingredients)
  • Cutting Board and Knife
  • Measuring spoons and cups
  • Serving Plate or Lunch Containers (if prepping ahead)
  • Optional: Toothpicks for securing wraps
  • RV Tip: If counter space is tight, use your air fryer basket for crisping bacon and then mix the drizzle right in a mason jar — shake, drizzle, done.

Method
 

  1. Cook the Bacon: In a skillet or air fryer, cook bacon until crisp. Drain on paper towel.
  2. Mix the Drizzle: In a small bowl, whisk all drizzle ingredients until creamy. Adjust salt or lemon to taste.
  3. Assemble the Wraps: Lay lettuce leaves flat and layer turkey slices, bacon, carrots or cucumber, and avocado.
  4. Drizzle & Roll: Spoon the herb sauce over each wrap, fold, and roll like a burrito. Secure with a toothpick if needed.
  5. Serve: Enjoy immediately — they’re best fresh and slightly messy.
