There’s something special about pulling a warm loaf of homemade bread from the oven. This soft gluten-free sandwich bread is tender, flavorful, and proof that homemade really is worth the wait.

There’s an unwritten rule in my RV… if fresh bread comes out of the oven, everyone suddenly forgets whatever they were doing five minutes ago. The smell alone is enough to lure people into the kitchen like a cartoon character floating toward an open windowsill. Before I could even photograph this loaf, someone was already asking, “So… are we slicing it now?” The answer, for the record, was, “Not yet!” (Followed by me guarding the cooling rack like it contained the crown jewels.)
After plenty of testing, tweaking, and one very happy taste test, this loaf finally became everything I was hoping for. It’s soft enough for sandwiches, sturdy enough for toast, and has that fresh-from-the-oven flavor you just can’t buy in a bag. Best of all, it’s gluten-free, dairy-free, preservative-free, and made with simple ingredients you can actually pronounce. Once you bake your own loaf, don’t be surprised if the store-bought bread starts giving you the side-eye from the pantry. It knows its days are numbered. 🍞😄

Homemade Gluten-Free Sandwich Bread Loaf

Prepare the Pan
Lightly grease a 9¼ x 5½ x 3-inch loaf pan or line it with parchment paper, leaving enough overhang to lift the bread out after baking.Mix the Dry Ingredients
In the bowl of a stand mixer fitted with the paddle attachment, combine: flour, sugar, salt, instant yeast and collagen peptides. Mix briefly to evenly distribute everything.Add the Wet Ingredients
Add: eggs, warm water (105° – 110°), olive oil, apple cider vinegar, mashed potatoes. Mix on Speed 2 for 2–3 minutes, scraping down the bowl once if needed.Rest the Dough
Let the dough rest in the mixing bowl, covered, for 10–15 minutes. This allows the gluten-free flour to fully hydrate for a softer finished loaf.Final Mix
Mix on Speed 4 for 30–60 seconds until the dough becomes smooth and fluffy.Pan the Dough
Transfer the dough into the prepared loaf pan. Smooth the top with a damp spatula.Rise
Cover loosely with lightly greased plastic wrap or a clean kitchen towel. Allow to rise in a warm place for about 1 hour, or until the dough crowns about 1 inch above the rim of the pan.Bake
Preheat oven to 370°F (188°C).Bake on the center rack for 48 minutes.After approximately 25 minutes, loosely tent the loaf with foil to prevent over-browning.The bread is done when:internal temperature reaches 198–200°F (92–93°C)crust is golden brown and loaf sounds hollow when tappedCool
Allow the loaf to cool in the pan for 5–10 minutes.Lift it out using the parchment paper and transfer to a wire rack.Brush the top with a little melted ghee if desired for a softer crust and beautiful shine.Cool at least 30 minutes before slicing, and about 1½ hours total for the cleanest slices.

Chef’s Notes
Dough Texture
Unlike traditional bread dough, this gluten-free dough will look more like a very thick cake batter or soft mashed potatoes than something you can knead. Resist the urge to add more flour. After resting and the final mix, the dough should be smooth, fluffy, and hold soft peaks when lifted with a spatula.
Don’t Skip the Rest
Allowing the dough to rest for 10–15 minutes after the first mix gives the gluten-free flour time to fully hydrate. This simple step helps create a softer crumb and makes the dough easier to work with.
The Final Whip
That last 30–60 seconds on Speed 4 isn’t just another mix—it whips air into the dough, helping create a lighter, softer loaf. You’ll notice the dough becoming smoother and slightly fluffier before transferring it to the pan.
Watch the Rise, Not the Clock
Rise times vary depending on the temperature of your kitchen. Instead of watching the clock, look for the dough to rise until it’s about 1 inch above the rim of the pan. If it overproofs, the loaf can collapse while baking.
Internal Temperature
For the most reliable results, use an instant-read thermometer. The loaf is fully baked when the center reaches 198–200°F (92–93°C).
Let It Cool
I know… it’s torture. But letting the bread cool for at least 30 minutes (or about 1½ hours for perfectly clean slices) allows the crumb to finish setting. Slicing too soon can make even a perfectly baked loaf seem gummy.
A Little Shine
For a soft, beautiful crust, brush the top with a little melted ghee as soon as the loaf comes out of the oven. It adds just enough richness without making the crust greasy.
*Recipe Tested: This recipe was developed in a Toshiba countertop oven and baked in a 9¼ × 5½ × 3-inch loaf pan. Oven temperatures and pan sizes can affect baking time, so always use the internal temperature as your final guide.
Storage
Store the cooled loaf tightly wrapped or in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to 1 week or freeze individual slices for up to 3 months. Placing parchment paper between slices before freezing makes it easy to grab just what you need.
Reheating
Enjoy at room temperature or warm individual slices in a toaster or toaster oven until lightly golden. If frozen, thaw at room temperature for about 15–20 minutes, or toast directly from frozen for a quick breakfast or sandwich. Avoid microwaving for too long, as gluten-free bread can become chewy.
