AIP “Cheesy” Chicken Noodle Skillet (Dairy-Free, One-Pan Comfort Meal)

- Make the AIP Sour Cream Base: In a small bowl, whisk together the coconut cream, lemon juice, ACV, garlic powder, salt, and nutritional yeast (if using). Set aside.
- Cook the Chicken: Heat oil in a skillet over medium heat. Add diced chicken, season lightly with pink salt, and cook until browned and cooked through.
- Add Aromatics & Mushrooms: Add the diced onion and garlic. Cook for 2–3 minutes. Add the sliced mushrooms and sauté until they release moisture and begin to brown (about 4–5 minutes).
- Add the Noodles: Stir in the zoodles and the cooked gluten-free pasta (if using). Warm through.
- Add the Cheesy Sauce: Pour in the prepared AIP sour-cream mixture. Add ½ cup broth and stir until creamy. If using gluten-free pasta, add extra broth as needed — the noodles will absorb some of the sauce.
- Add Peas (Optional): If using peas, stir them in now and cook 3–4 minutes until heated through.
- Simmer & Taste: Reduce heat and let everything cook together for 3–5 minutes. Adjust lemon, salt, or broth for creaminess and flavor.
