Nourish-Nest Soft & Chewy Gluten-Free Chocolate Chip Cookies

Method
- Preheat pellet grill to 350°F with lid closed for 15 minutes.
- Line a thick aluminum bakery sheet with a silicone baking mat.
- Cream butter and coconut sugar for 2–3 minutes.
- Add egg and vanilla; mix until smooth.
- Whisk together flour, tapioca, baking soda, and salt. Add to wet ingredients.
- Fold in chocolate chips. Scoop 12–14 dough balls and flatten slightly.
- Optional: Chill dough 10 minutes for extra thickness.
- Bake on the middle of the grill for 10–13 minutes, rotating the pan halfway.
- Cool on the baking sheet for 10 minutes before serving.
- Preheat oven to 350°F.
- Line a baking sheet with parchment or a silicone mat.
- Prepare dough as directed above.
- Scoop and flatten slightly.
- Bake on the middle rack for 9–11 minutes, until edges are golden and centers look soft.
- Cool on the baking sheet for 10 minutes.

Right after baking, place a round biscuit cutter (or wide glass) over each warm cookie and gently swirl in a circular motion. This pulls in the soft edges and creates thicker, rounder, bakery-style cookies.Finishing Touch — Pink Salt
For a balanced salty-sweet finish, sprinkle each warm cookie with a tiny pinch of pink salt or coarse sea salt right after swirling.Brown Butter Option
Melt butter over medium heat until it foams, then browns and smells nutty and caramel-like. Remove from heat and cool 5–10 minutes before using. Brown butter gives the cookies a classic bakery caramel flavor.Brown Ghee Option
