There’s something downright magical about the smell of toasting coconut — warm, nutty, and just sweet enough to make the whole RV smell like a tropical bakery. These Toasted Coconut Crunch Crumbles take that magic and turn it into a crisp, golden topping that’s good on everything. They’re lightly sweetened with maple syrup, kissed with a hint of cinnamon, and baked until perfectly crunchy — no refined sugar, no grains, just pure cozy simplicity.

They’re also ridiculously easy to make (which we love). A quick mix, a short bake, and you’ve got a jar full of crunchy goodness ready to sprinkle on yogurt, fruit, or smoothie bowls. And if you’re anything like me, half the batch might mysteriously disappear before it even cools — because “taste-testing,” of course. These crumbles are one of those simple recipes that feel special, even on the busiest mornings.

  • Endlessly useful: Sprinkle it on yogurt, fruit, smoothies, or straight into your mouth (no judgment).

Make-Ahead

These coconut crumbles are a meal-prep dream. Whip up a batch at the start of the week and keep them handy for topping yogurt, fruit, or smoothie bowls. They stay crisp for days, so you can sprinkle a little sunshine on your breakfasts without turning on the oven every morning. If you’re planning ahead for travel or a busy week, portion the crumbles into small jars or reusable bags — they’re perfect grab-and-go toppers (and road-trip snacks, if we’re being honest).

Storage

Store your Toasted Coconut Crunch Crumbles in an airtight glass jar or tin at room temperature for up to 2 weeks. Keep them in a cool, dry spot away from humidity — coconut loves to absorb moisture.
If you want to stash some for longer, freeze in a sealed bag for up to 2 months. Let them come back to room temp before eating so they stay crisp instead of chewy. Bonus tiny-freezer tip: if space is tight, flatten the bag and slide it behind the frozen veggies — you’ll thank yourself later.
